Easy and delicious quinoa salad.

This is probably the one type of lunch you’ll see me eating most of the days at the moment, but it’s also a lovely meal for an easy and light type of dinner. It’s great because it’s one of those dishes that allows you to use whatever veggies you might have left in the fridge. I usually put in “a bit of everything”.

Den er især god fordi det er én af de der retter, hvor man rigtig kan få tømt ud i køleskabet og få spist de sidste grøntsager man måtte have liggende, fra den forgangne uge. Eller bare hvad man nu lige har. Jeg plejer at blande “lidt af det hele” i.

In this salad:

1 dl quinoa

Rocket salad

Cherry tomatoes

Cucumber

Cheese slices cut into small cubes (sometimes you need a bit of extra something)

Apple cubes

A bit of chili mayo

Spiced with salt and a bit of pepper mix

 

It’s mainly the quinoa that makes the big difference here, and also what makes me feel full for the rest of the afternoon. It’s fresh and delicious without being a heavy meal. I especially like mixing in a fresh pear, an apple or some mango cubes with the whole thing. Mostly I’ll choose the pear cubes because that’s one of the fruits we almost always have in our fridge. It’s great as a healthy snack during the day or evening. Quinoa is amazing for several reasons – it’s perfect for those of us who don’t really eat a lot of meat, because it contains a high level of both proteins and iron. It’s also great for stabilising the sugar in your blood, which in the end will help you control your sweet tooth. There’s no doubt that I love quinoa, and I almost always have it in stock. Both so I can eat it for lunch but also as an easy dinner if I’m home alone, and I don’t want to bother cooking all that much just for me.

1 dl quinoa

Rucola salat

Cherry tomater

Agurk

Skiveost skåret i tern (nogle gange må det gerne være lidt ekstra godt)

Æbletern

En lille smule chili mayo

Krydret med lidt salt og peberblanding

 

Det er quinoaen der gør den store forskel her, og også lige netop det der gør, at jeg holder mig mæt hele eftermiddagen. Det er friskt og lækkert uden at blive tungt. Synes især det er lækkert, hvis man lige blander lidt friske pærer, et æble eller en mango i. For det meste bliver det til pærestykker for mit vedkommende, for det er én af de frugter vi næsten altid har i køleskabet. Bare til at stille den lille sult, eller hvis man bliver lidt lækkersulten om aftenen. Quinoa er sundt af flere årsager – det er især godt til os der ikke rigtig spiser kød, fordi der er et højt indhold af både jern og proteiner i. Desuden stabiliserer det blodsukkeret, som i sidste ende kan være med til at styre din trang til noget sødt. Der er ingen tvivl om, at jeg elsker quinoa, og jeg sørger næsten altid for at have det på lager. Både så jeg kan spise det til frokost, men også til en aften hvor man måske er selv hjemme og ikke order at kokkerere en helt masse bare til sig selv.

Sometimes I’ll eat leftovers from the night before for lunch, maybe a slice of rye bread with some fish or simply some cooked potatoes, tomato and cucumber. I love lunch and I always stick with my lunch break around noon, like I’ve always done. Even after working solely on my own now. It’s usually about that time my brain needs a break anyway. Sometimes I’ll even go for a quick walk with Oskar too, just to get some air. I find these healthy routines super important for my well-being (both mentally and physically) and overall productivity and quality of my work. I think most people could agree on that.

Somme tider bliver frokosten også til lidt rester fra aftenen før, eller måske et stykke rugbrød enten med fisk eller måske tomat, kartoffel og agurk. Jeg elsker frokost, og holder altid en pause der ved 12-tiden om formiddagen, som jeg altid har gjort. Selv efter at jeg er begyndt at arbejde hjemme. Det passer meget godt med, at min hjerne har brug for lidt adspredelse der alligevel. Somme tider går jeg også en kort lille tur med Oskar, bare for at få lidt luft. De sunde rutiner er så vigtige, både for mit mentale (og fysiske) velvære og også min overordnede produktivitet og kvalitet af mit arbejde. Sådan tror jeg de fleste mennesker har det.

    Tusind tak for en fantastisk blog. Vil du ikke lave endnu mere omkring mad, og hvad du spiser. Måske en meget detaljeret med morgenmad, frokost, aftensmad og mellemmåltider. Jeg ved, at du har berørt emnet, men jeg vil elske endnu mere.
    Holder virkelig meget af at se dine vlogs. Specielt om din måde at leve, spise, tænke på, og hvordan du passer på dig selv med kost, motion, ro og balance.
    Håber virkelig, at jeg en dag kan blive bare (lidt) ligesom dig 🙂
    Og for resten, en anden ting. Du lavede en video om, hvad du gjorde for at elske efteråret – kunne man ikke også lave det om forår, sommer og vinter 🙂

      I think the real term is “Arugula” or Wild rocket. You’ve never had it before? It’s really good 😀 x

    I made this tonight and when I added the chili mayo (which was awesome) the quinoa turned sort of mushy. Has this happened to you?

      Lovely you went and tried this! Hmm I mean of course the quinoa will soak up the mayo and become a little “thick” but min never gets mushy. Did you boil the quinoa until no water was left? 🙂 Thinking they might have been too watery maybe! x
