Falafel waffels with green toppings

Everytime I share any kinds of food images on my Instagram story (especially the meatfree kind) you guys go crazy in my DM inbox, because you’d like me to share the recipe. Therefore I asked you guys if you would like me to make a whole new category on the blog dedicated to food inspiration and recipes, and you guys were all in! I’m no chef or anything like that, but I actually find it quite valuable to share tips & tricks just one ordinary “house-wife” to another. I just made myself sound so old, but anywho. To me it’s a combination of not wanting to support our overconsumption of meat/animals and therefore also the environmental and ethical consequences this has. I don’t call myself a vegetarian, I just evolve my eating habits around plant-based meals – but I do still eat cheese, eggs and sometimes even meat. But it’s getting less and less and if I have the possibility of choosing the meatfree option, that’s mostly what I do. I plan most of our meals through this vegan recipe app, so I’ll be sure that our meals are not only delicious but that they also make us full.

Hver eneste gang jeg deler madrelaterede opslag med jer i min Instagram story (navnligt af den kødfrie slags), så vælter det ind med efterspørgsler på opskriften i min indbakke. Jeg spurgte jer derfor om I kunne tænke jer en hel kategori her på bloggen dedikeret til netop kødfrie opskrifter og inspiration, og det var I ret hooked på! Nu er jeg jo ikke kok eller noget, men jeg synes også det har sin charme, at dele tips og tricks sådan lidt fra en “madmor” til en anden. Ny lyder jeg mega gammel, men altså. Hvis I kunne tænke jer lidt flere tanker om hvorfor jeg er stor tilhænger af, at spise mindre kød kan I læse mere lige HER. For mig er det en blanding af ikke at ville bakke op om vores overforbrug af kød/dyr og dermed både de miljømæssige og etiske konsekvenser det har. Men jeg kalder mig hverken vegetar eller veganer – jeg spiser bare overvejende plantebaseret, men spiser stadig æg og ost nogle gange, og indimellem spiser jeg da også lidt kød. Men det bliver faktisk ikke til så meget mere, og er det vegetariske valg der, så er det oftest dét jeg vælger. Desuden planlægger jeg de fleste af vores aftenmåltider via denne veganske opskrifts-app, så jeg er sikker på det ikke kun smager godt men også mætter.

But anyway, let’s have a look at the recipe! Who doesn’t love waffles – both the dessert kind but also the more healthy, dinner-appropriate kind? The recipe is so simple – it’s a basic falafel recipe that you pop into your waffle iron. And then you can top the waffles with all the green topping you like! It’s also a good recipe for emptying your fridge from leftovers salat and greens, so if you have any of that you can eat it with your waffles. The recipe is not vegan since it contains a couple of eggs, but I bet you’d be able to find a vegan falafel recipe somewhere on the world wide web too.

Nå, men lad os tage et kig på dagens opskrift! Hvem elsker ikke vafler – både de søde men også af den mere måltidsvenlige slags? Opskriften er super simpel – det er en helt basic falafel opskrift, men i stedet for, at forme falaflerne som kugler og stege dem, så kommer du dem bare i dit vaffel jern i stedet. Og så kan du putte alverdens topping på! Det er også en god “tøm køleskabet” form for opskrift, så hvis du har nogle forskellige rester af grønt, så kan det spises sammen med vaflerne. Opskriften er ikke vegansk eftersom den indeholder æg, men mon ikke der findes en vegansk opskrift på falafler et sted på google.

I’m not gonna share the recipe with you here, because I can’t take credit for the idea at all! I found it on this (Danish) blog, but you can find a recipe on falafels in english right HERE. I will share would kinds of toppings we like to put on our waffles though! It’s everything from Napolitana salad, cucumber, tomatoes, homemade pickled red onions and avocado slices. We usually start by putting a spread of chili mayo on the waffel before adding our toppings and it’s so good! On the pictures above there’s also a bit of cottage cheese on top, because we had it in the fridge and we wanted to finish it up. Then you can always finish up with a bit of dressing too. It’s important when you make falafels that you’re not afraid of using a lot of different spices and herbs to give a good taste. It’s actually important in general when you make meatfree meals. Some of my absolute go-to herbs and spices are both fresh and ground coriander, ground cumin, dried chili flakes, thyme, parsley, basil leaves, paprika and not to mention garlic.

Jeg vil ikke dele opskriften med jer her, for jeg har nemlig ikke selv fundet på den og kan derfor slet ikke tage credit for idéen. I stedet kan du besøge Valdemarsro lige HER, hvor jeg i første omgang blev inspireret til, at lave de lækre falafel vafler. Men jeg vil gerne dele hvilken form for topping vi som regel putter på, når vi laver vores! Det er alt fra napolitana salat, agurk, tomat, hjemmesyltede rødløg og avocado. På billederne ovenfor var der også hytteost på, fordi vi havde en bøtte stående vi skulle have tømt. På bunden plejer vi at smøre et tyndt lag chili mayo på – det smager simpelthen SÅ godt! Og så kan du jo altid slutte af med en god dressing på toppen. Det er vigtigt når du laver falafler, at du ikke er bange for at bruge godt med krydderurter og krydderier. Det er egentlig en generel tommelfingerregel når du laver kødfri mad. Nogle af de ingredienser jeg personligt ikke kan leve uden i mit køkken er både frisk og stødt koriander, spidskommen, tørret chili, timian, persille, basilikum, paprika og ikke mindst hvidløg.
