Healthy lunch on the go (driver’s appropriate too)

A couple weeks ago I went on one of my shopping trips for my shop. I drove off in the morning, so I could be at the first place rather early, and so I also knew I was gonna be away from home and on the go most of the day. So I decided to put together this rather simple lunch, both so I made sure I got something healthy to eat through the day but also so I wouldn’t fall into the take-away trap. As much as I enjoy eating out you might as well eat what you already have in your fridge, right?

For et par uger siden var jeg på én af mine shopping ture, for at købe ind til min shop. Jeg tog afsted tidligt om formiddagen, sådan at jeg ville være fremme ved det første sted allerede ved 10-tiden, og jeg vidste desuden at jeg ville være væk det meste af dagen. Derfor smækkede jeg denne simple frokost sammen, så jeg ikke blot var sikker på at jeg ville få noget sundt og lækkert at spise når jeg var sulten, men også så jeg ligesom kunne undgå at falde i take-away fælden. Hyggeligt som det kan være at spise ude, så kan man jo ligeså godt få spist dét, som man allerede har i sit køleskab, ikke?

I spend a lot of the day driving when I’m away on these trips, so therefore it crossed my mind that I needed to make something that I could eat in the car while moving from place to place. I know it gets really practical now, but exactly because of that I went for something fresh and delicious that wouldn’t make a mess in the car, and at the same time something that would be safe to eat while driving as well. Safety first, you know! It’s a ridiculously simple kind of lunch I know, and there’s nothing groundbreaking about it at all. Still I thought it was quite clever to cut everything into bitesized sticks while bringing a handful of mixed nuts on the side to get something a bit more substantial as well. I always bring my water bottle that I got as a gift from Everlane a while back, and I bring it with me everywhere! I drink around 2 liters of water every day, and I ALWAYS keep a bottle with water in the holder of the car door when I’m on the go. 

Jeg kører meget rundt når jeg er på disse ture, så derfor tænkte jeg det kunne være lidt smart, at gå efter noget som nemt kunne spises i bilen. Nu bliver det måske lidt (meget) lavpraktisk, men netop af den årsag gik jeg efter noget friskt og lækkert, som ikke sviner for meget og som ikke mindst er sikkert at gnaske i, mens man befærder sig rundt i trafikken. Safety first, I ved! Det er en vildt simpel frokost I know, der er ikke mege nytænkning her. Men alligevel synes jeg det er smart det der med, at sørge for at skære frugt og grøntsager ud i mundrette stænger og ikke mindst tage en håndfuld blandede nødder med, så der er noget med lidt mere substans i. Min drikkedunk har jeg fået i gave af Everlane for et stykke tid siden, og den kommer med mig overalt! Jeg drikker omkring 2 liter vand dagligt, og jeg har ALTID en flaske vand stående i holderen i bildøren når jeg er på farten.

The crisp-bread is homemade and gluten-free, and it’s the easiest thing to make. We found the (Danish) recipe HERE. For the next batch I’d love to sprinkle some seasalt and some herbs like rosemary or oregano on the whole thing, I think that would be a lovely way to variate the taste a little bit. Last time we made these crisp-breads we made a double batch, and so we had enough for 1,5 weeks. It’s such a lovely snack, which would also be amazing with a bit of pesto I’m sure. I brought a good handful of cashew nuts and almonds as well, and I had also cut myself a pear, some carrots and some cucumber. Besides that I also brought my reusable coffeecup (this one is super old btw) because I’m really trying to remind myself of bringing it with me, when I know there’s a potential opportunity to pick up a to-go coffee. Just to avoid the extra waist of cardboard cups and plastik lids you know. I met up with a good friend of mine before continuing my shopping trip, and we actually did pick up some coffee and then we went for a long walk. I had brought Oskar as well, and he was naturally super tired after that walk and fell fast asleep in his cage in the car afterwards. So while I was shopping he chilled out in there. Such a lovely day! My lunch made me full enough to get through the afternoon, and it was just so fresh and deliciously simple. I’m sure many of you know what it’s like to be on the go, and not least how it can effect your energy (and mood) negatively when you’re hungry, so this little kit is a future lifesaver for me for sure. 

Knækbrødet er hjemmelavet og glutenfrit, og det er simpelthen så nemt at lave. Vi har fundet opskriften HER. Næste gang kunne jeg godt tænke mig at prøve, at drysse det med havsalt og krydderier som rosmarin eller oregano, det tror jeg kunne være vildt lækkert, bare for at variere smagen lidt. Sidste vi lavede det, så lavede vi en dobbeltportion og havde knækbrød til ca. 1,5 uge. Det er et dejligt lille mellemmåltid, som helt sikkert også er lækkert med lidt pesto til. Jeg havde taget en god håndfuld cashewnødder og mandler med også, og så havde jeg skåret mig en pærre, et par gulerødder og nogle agurkestænger også. Desuden havde jeg en genanvendelig kaffekop med (denne er iøvrigt vildt gammel!) for jeg øver mig virkelig i, at blive bedre til at huske denne når jeg skal på tur og nr jeg véd, der er stor chance for jeg får lyst til en to-go kaffe. Bare så man undgår ekstra spild i form af kaffekopper og plastiklåg. Jeg mødtes med en veninde inden jeg kørte afsted på tur, og så købte vi nemlig en kaffe og gik en lang tur inden jeg skulle afsted. Jeg havde Oskar med, og efter vores lange tur var han jo bare sindssygt træt og så kunne han ligge og putte i sit hundebur i bilen, mens jeg handlede ind. Så hyggelig en dag! Frokosten mættede rigeligt, og den var dejlig frisk. Er sikker på mange af jer kender det dér med at være på farten, og ikke mindst hvordan man kan miste både energi (og sit gode humør) når man bliver sulten, så dette lille kit bliver helt klart en lifesaver for mig i fremtiden.
